Paleo Chocolate Pudding Recipe with Cacao Nibs

A delicious Paleo Chocolate pudding recipe that is healthy and full of healthy fats and NO added sugars! Plus, the Cacao Nibs are high in antioxidants! This is one treat that you won't feel guilty for indulging in.

Ingredients

  • 3-4 Ripe Avocados
  • 1 cup Pitted Dates
  • 1/2 cup Unsweetened Vanilla Almond Milk (can also use Coconut Milk instead)
  • 1-2 tbsp Raw Organic Honey (optional - omit if you want this to be a vegan recipe)
  • 1 tbsp Organic Vanilla Extract
  • 1/2 cup Unsweetened 100% Cacao Powder
  • Raw Cacao Nibs (for topping, to taste)

Instructions

  1. In a food processor, combine the pitted dates and the unsweetened almond milk and puree until smooth (you *can* use a high speed blender, but I have found that a food processor really is the best for this because those dates can be tough to puree)

  2. Add in the avocados, the vanilla extract, the cacao powder, and the raw organic honey to the food processor and blend until smooth. NOTE: I put the honey as optional, but honestly, I prefer it with the honey because it adds just a little more sweetness. If you remove the honey, it is still delicious, but the honey definitely make it taste way sweeter like you'd expect chocolate pudding to taste like! You can also omit the pitted dates altogether and just add extra honey if you'd like! It's really up to you!

  3. Blend in the food process until smooth and creamy. If the pudding is too thick, add a little more milk. Add in a VERY SMALL AMOUNT at a time and blend. You don't want it to be too liquidy... it should be smooth and creamy like pudding out to be! 

  4. MOST IMPORTANT PART: Chill in the refrigerator for at least 2-3 hours before serving. It will taste fine if you try it right away, but honestly, it tastes 1,000 times better chilled. 

  5. Put your pudding in a bowl and top with a desired amount of raw cacao nibs! ENJOY!
