A SUPER Easy and Healthy Three Ingredient Pesto Chicken Salad Recipe
skinless chicken breast
plain, whole milk Greek yogurt
of basil pesto
I used some pre-made basil pesto I got from Relay Foods, but I have made it from scratch before
First, you want to cook the chicken. I actually had my chicken in the freezer and threw it in the crockpot on low for 8 hours (no water, no nothing... just throw the frozen chicken in there!) I learned this trick from my sister and it's life changing! So easy!
Once the chicken is cooked, shred it. I like to use an electric mixer (either a hand or stand mixer) to shred the chicken.
Then, add in the greek yogurt. Now, I will be honest with y'all... I totally eyeballed this. I am GUESSTIMATING I used about 1/2 cup of Greek yogurt. My suggestion is to use a little bit at a time and mix it up and add as needed.
Then, add in the pesto. Again, I guesstimated. Add a little bit at a time... mix it up, taste it, add a little more, mix it up, taste it.
Get it to the consistency and flavor you like! Feel free to add anything in like pine nuts, etc.
Voila! You're done!
