Easy & Healthy Three Ingredient Pesto Chicken Salad Recipe

Ingredients

  • 2 pounds of boneless skinless chicken breast
  • 1/2-3/4 cup of organic plain, whole milk Greek yogurt
  • 1/4-1/2 cup of basil pesto I used some pre-made basil pesto I got from Relay Foods, but I have made it from scratch before

Instructions

  1. First, you want to cook the chicken. I actually had my chicken in the freezer and threw it in the crockpot on low for 8 hours (no water, no nothing... just throw the frozen chicken in there!) I learned this trick from my sister and it's life changing! So easy!
  2. Once the chicken is cooked, shred it. I like to use an electric mixer (either a hand or stand mixer) to shred the chicken.
  3. Then, add in the greek yogurt. Now, I will be honest with y'all... I totally eyeballed this. I am GUESSTIMATING I used about 1/2 cup of Greek yogurt. My suggestion is to use a little bit at a time and mix it up and add as needed.
  4. Then, add in the pesto. Again, I guesstimated. Add a little bit at a time... mix it up, taste it, add a little more, mix it up, taste it.
  5. Get it to the consistency and flavor you like! Feel free to add anything in like pine nuts, etc.
  6. Voila! You're done!
