It’s funny because our grandparents and ancestors did this for years, yet somehow, it’s come onto the scene as this trendy, new concept. Regardless, our guest today wanted to make clean, healthy food more accessible. Join us as we speak with Kat Eckles, the founder of Clean Juice.

Meet Today’s Guest.

  • 1:08 – Kat Eckles is the founder of Clean Juice. It’s the only USDA certified organic juice bar in the country. She joins us to discuss how her homemade smoothies and juices inspired the idea of opening a juice bar in Charlotte, North Carolina.

The Kat 101.

  • 2:30 – Kat is a mom of five, and she wants to create a healthy home for her children. As a young mom, she researched healthy foods, looking for ways to make green smoothies a bit tastier. She quickly discovered you could disguise the taste of spinach in a smoothie by adding a banana and some blueberries. What started as a way to make nutritious meals for her children became a business when she and her husband decided it was time for a career change. They moved to Charlotte and started Clean Juice in 2014.

Origins Of Clean Juice.   

  • 6:45 – Kat lived in suburban Pennsylvania, and while she enjoyed making smoothies and juices at home, she realized there weren’t many healthy options for the general public. Most play dates ended at fast food jaunts, and she wanted to create healthier options for other families.

Turning A Hobby Into A Business.

  • 8:30 – Kat attributes much of her success to her faith. She believes God provided her family with the right opportunity at the right time. She also credits her husband and his business acumen. The two of them worked together leveraging their savings in order to get the credit off the ground. They tried to keep things simple as they got started. The fruit came from Costco, and the staff came from local churches and youth groups.

Rooted In Faith. 

  • 12:19 – Clean Juice puts faith at the forefront of its business. Scripture decorates cups, bowls, and other branded materials. Kat says she committed her family to faith when she moved back to North Carolina. She saw how God was able to hold her family together, and she wants to incorporate that into her business.

Expanding The Business. 

  • 16:40 – As soon as Clean Juice opened its doors, customers wanted to know where they could find others. They’d always wanted to open 10 Clean Juice franchises in Charlotte, and they quickly decided other communities needed access to healthy food as well. Today, Clean Juice has 56 stores in thirteen states. They hope to be in more than twenty states by the end of 2019.

Partnering With Burn. 

  • 21:49 – Clean Juice shares a unique partnership with Burn Boot Camp, which also started near Charlotte, North Carolina. Both businesses care about health and wellness, and they regularly collaborate and share business ideas.

Since When Did Healthy Eating Become A Trend? 

  • 23:55 – When did eating fruits and vegetables become a trend? They’ve always been good for our bodies, so it’s hard to imagine healthy eating becoming a “one hit wonder.” While it might not be realistic to only drink clean juices and smoothies, a fast or juice cleanse can work wonders for your body as you seek to create a healthy lifestyle and prevent various diseases.

Defining The New Vision.

  • 32:41 – In Charlotte, there’s tremendous income gap between underprivileged and wealthier families. Certain families don’t have access to healthy foods, and Clean Juice wants to shift that paradigm. The new foundation will work to create opportunities for kids in schools to eat healthy at home.

Kat and Landon Eckles started Clean Juice in Charlotte, North Carolina in 2014. At the time, Landon was ready for a career change and Kat had spent the better part of a decade making smoothies and juices at home. They opened their first location on Jun 5th, 2015, their 8th wedding anniversary. Since then, Clean Juice has more than 100 locations in development in 16 states.

They work tirelessly to serve the most premier products to the communities that Clean Juice is placed in, and they believe wholeheartedly in the importance of a HEALTHY BODY & STRONG SPIRIT. They aim to make Clean Juice accessible to everyone in everyday life.

On #worldprematurityday, our preemie, Galilee Joy, would like to say: “Already this household is bending to my every will! Muahahahahaha.”

World, meet the miracle we never knew we’d witness… our daughter, the best surprise of our lives: Galilee Joy Stillman.

I’ve wrestled with how I’d even begin to write a post like this, but at this point, this is my imperfect attempt. For those that have followed along, in 2018, we lost our sons Elijah and Malachi in back-to-back second trimester losses. After that, we essentially were told we couldn’t have more children and so we’d grieved, but accepted the reality, and trusted God in it all.

Fast forward to April of 2025, and I find myself with the surprise of a lifetime - a positive pregnancy test. We chose to keep the news close to ourselves and just our close friends and family… this pregnancy was not without its complications (pregnant at 40 is NO JOKE 🥴), but God’s hand was in every detail. Also, hiding this from the internet was a challenge! 😂

This past Monday, I went in for a routine OB checkup at 35 weeks and, long story long, ended up in the hospital, diagnosed with severe preeclampsia and sent into an emergency c-section. Our miracle was born at 5:25pm and the sound of her cry filled the room with JOY. We didn’t find out her gender until birth so hearing “it’s a girl!” was such sweet news!

This week has not been without its challenges for us both and we’re not out of the hospital yet, but we’re thankful that God’s been protecting us all along. I’m at a loss for words at how the people in our lives have showed up for us this week and beyond. There aren’t enough thank yous to adequately express our gratitude.

I’ll share her full birth story at some point because it’s a doozy.

Six years ago I felt God calling me to go to Seminary. I ignored that call, coming up with excuse after excuse as to why I shouldn’t or why I *couldn’t* do it. Then in 2024, God swung the door to attend @denverseminary wide open to join the Women’s Leadership Cohort and practically shoved me through.

I’m finishing my first full year and just completed my first residency week on campus studying the Epistles and Revelation. I didn’t know what to expect walking into this week, but any expectation I COULD have had was completely blown away.

To study under the brilliant Dr. Joey Dodson (@jrrdodson) and guests like @preston.sprinkle, @madisonpiercephd, @studies_in_revelation, and more was incredible. To learn alongside some of the most brilliant women I’ve ever met was a gift.

I’m leaving with even more questions than I arrived with, but also more assurance that I am PRECISELY where I am supposed to be. I can’t help but smile thinking about the Apostle Paul learning that in 2025 a group of WOMEN are studying the Word of God and how much that would delight him. I pray I steward this responsibility well. #womeninseminary #densem #denverseminary #seminary #densemwlc #womensleadershipcohort

What a gift, what a joy, what a PRIVILEGE to study God’s word under some of the greatest scholars of our day alongside the most brilliant group of women.

We are being stretched, challenged, affirmed, convicted, and shaped. Nary a one of us will leave this place the same.

But isn’t that the goal? To encounter Christ and walk away different every single time.
