RECIPE | Healthy Zucchini, Carrot, & Raisin Einkorn Flour Muffins

A delicious, healthy recipe for muffins packed with veggies!

Ingredients

  • 1 cup Einkorn grain flour you can substitute 1 cup of all purpose flour or whole wheat
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 3 tablespoons butter melted
  • ½ cup raw honey
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 cup finely grated zucchini
  • ½ cup finely grated carrot
  • ½ cup raisins

Instructions

  1. Preheat oven to 350°F
  2. Place rack in the center of the oven, coat muffin tin with cooking spray OR use muffin cups.
  3. Combine the DRY ingredients - Einkorn flour, cinnamon, salt, and baking soda in a mixing bowl and whisk until thoroughly combined. Set aside.
  4. In a large mixing bowl, stir together the WET ingredients... butter, honey, egg, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and stir together until just barely combined.
  6. Now, add the zucchini, carrot and raisins and stir gently until evenly distributed.
  7. Fill each cup in the muffin pan approximately ¾ full.
  8. Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
