Today’s “Fitness Friday” is switching over to a recipe instead of a workout! Being pregnant, I’m pretty much ALWAYS hungry. And, if I let myself get even the tiniest bit hungry… I get nauseous. So, needless to say, I snack A LOT.
And, it’s hard to find easy, grab-and-go, HEALTHY snacks that fill me up just enough… and again, are HEALTHY. I’m really trying SO hard to stay fit this pregnancy and not give into all the cravings for fries and pizza that I have.
We have had a TON of zucchini on hand from our local farm CSA and I was trying to find a way to use it up. That, coupled with the fact that I’ve been SO eager to bake with the new Einkorn flour I got, that I figured zucchini muffins would be perfect! Then I thought… carrots and raisins would be good in there, too!
Anyway, my husband and I had a little “date night in” where we baked and made these muffins and they. are. delicious. You don’t taste the zucchini or carrots at ALL… it just makes the muffins super moist.
Also, bonus… there’s no added sugar – the only sweetener is the raw honey! And raw honey is good for you! So, win!
Now, a little bit about Einkorn flour. Einkorn is actually a grain… a wheat – the OLDEST known wheat, actually. It’s the “OG” of wheats. It dates all the way back to scripture and biblical times.
Einkorn is also EXTREMELY low in gluten (like, REALLY low) and has been found to be easier to digest for those that suffer from coeliac disease. Now, it’s not gluten FREE, but… it’s LOW. It’s also very high in protein and has so many more nutrients than the genetically modified wheats of today. Because of this, it’s easier on our digestive systems and our body can absorb all the nutrients better!
I get my Einkorn flour from… Young Living! They are actually one of the world’s most prominent producers of Einkorn grain.
So far, we are LOVING having Einkorn flour in our home! We also got Einkorn pancake & waffle mix, AND Einkorn spaghetti! YUM!
