I love pizza. I mean, who doesn’t love pizza? Crazy people, that’s who. 🙂
One of my favorite “easy” meals to throw together is pizza at home. I will be honest and say that I totally use store-bought crust… homemade crust just isn’t my thing. I’ve tried it a couple times, but it’s just more effort than it’s worth. At least for me. Especially when the Archer Farms whole wheat pizza crusts from Target are so delicious and cheap. BUT, even when you’re using a store bought pizza crust, you can still TOTALLY make it unique and different. You don’t just have to throw on some marinara sauce and cheese and pepperoni and call it a night.
Anyway, last week I had some leftovers in the fridge from the quiche I’d made. I’d made too much chicken, spinach, and broccoli mixture that didn’t fit in the quiche, so I’d thrown it in a tupperware container and saved it for later knowing I’d come up with SOME way to use it.
Well, I had some ricotta cheese that was about to go bad, the veggie / chicken mixture, and boom… this easy, healthy, and delicious white pizza was born!
It was SO easy to make and so, so, so, SO tasty. We devoured the whole thing… and Lilly even tried some and loved it!

An easy recipe for White Pizza with Spinach, Broccoli, and Chicken

tablespoons
of olive oil
divided

tablespoon
minced garlic

cup
spinach
I used frozen, but you could use fresh

cup
diced broccoli
-
1
cup
of cooked
diced chicken breast (I used about a pound of boneless, skinless chicken breast)

Original Mrs. Dash
optional... but I used it and it was delish

cup
grated mozzarella cheese

oz.
of ricotta cheese

Dried oregano
-
Dried rosemary
-

pre-made pizza crust
or you could certainly make your own if you're so brave... I like using the Archer Farms Whole Wheat thin crusts from Target

Preheat oven to the directions listed on your pre-made pizza crust's package. If you made your own crust, preheat your oven to 450 degrees.

Add 1/2 tablespoon of olive oil to skillet, then add your chicken.

Add Mrs. Dash to the chicken to really spice it up. I just love the flavor of the original Mrs. Dash and I love that it is salt free!

Then add your spinach and broccoli to the skillet and mix together. (Now, I ACTUALLY used the mixture that I had some leftovers from when I made my Spinach and Broccoli and Chicken quiche... but this is the directions if you are making this fresh)

Remove chicken, broccoli, spinach mixture from heat once cooked

Brush pizza dough / crust with remaining olive oil, then top with mozzarella cheese

Add dollops of ricotta cheese and your spinach, broccoli, chicken mixture

Bake for about 10-12 minutes or until the crust is brown

Remove from the oven and sprinkle with oregano and rosemary!
